How to make Hathaway’s Feta Chicken

In a small bowl, combine the cheeses, add salt and pepper. Set aside. Wash, cut, and prep the chicken. In a large non-stick skillet, on medium-high heat, add the oil. Place chicken in the skillet along with 1/4 cup of cheese mixture on top of each breasts. Saute, uncovered, for about 12 minutes. Carefully, add broth to the skillet and cover. Place the covered pan into the oven, on broil for 3 minutes. Take out of the oven and place back on the stovetop at a medium-low heat. Add spinach and cover again. Simmer for 4 minutes. Serve!


1 cup feta cheese
3 Tablespoons low fat cream cheese
4 boneless chicken breasts, halved
1 teaspoon olive oil
1/2 cup chicken or veggie broth
1/2 pack pre-washed fresh spinach
2 Tablespoons chopped walnuts
1 Tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
