How to make Asparagus and Sugar Snap Pea Salad:

In a large bowl, whisk together the lemon zest, juice, oil, sugar, salt, and pepper. Wash and thinly slice asparagus. Wash and chop off the ends of the sugar peas. Wash and cut the tomatoes in halves. Add all the vegetables to the bowl of dressing. Lastly, add the lettuce and scallions. Toss and serve. Recipe courteous of eatingwell.com.

2 teaspoons freshly grated lemon zest
1/4 cup lemon juice (about 1 1/2 lemons)
1/4 cup olive oil
1 teaspoon sugar (or honey)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 package of pre-washed lettuce
1 bunch asparagus
1 pound raw sugar snap peas
1/2 pint cherry tomatoes
1 bunch chopped scallions
